Warm Potato Salad

After boiling potatoes in their jacket, I ended up with a surplus. Decided to use them to make a warm potato salad and here it is!

Ingredients

  • 2 Russet potatoes, boiled, peeled and cubed
  • 1/4 cup yogurt at room temperature
  • Salt and pepper to taste
  • 1 minced clove garlic
  • 1/4 cup Tamarind date chutney
  • 1/2 tsp dried mint
  • Few leaves fresh mint chopped
  • 1/4 tsp Sumac

Place warm potatoes on serving plate. Mix together yogurt, salt, pepper and garlic to make a sauce and pour over the potatoes. Pour the tamarind chutney pn top. Sprinkle dried mint, sumac and chopped mint leaves. Serve warm.

Tamarind Date Chutney

  • 1 cup dates
  • 1/3 cup tamarind
  • 1″ cinnamon stick
  • 1-2 dried red chillies
  • Salt to taste

Cook with enough water to barely cover until everything is soft. I use a pressure cooker to make this. Cool. Blend. Freeze leftover chutney
